Our philosophy is that quality can be tasted. We believe that one’s sense of taste can be quantified by both quality and love. Our menu evolves with the seasons and we are always experimenting with new combinations of flavours to complement our selection of signature favourites. Everything we do is for the love of pizza, and we know you will taste the difference.

 

Our motivation is simple – we adore pizza.

ANDREW LEBLANC

Andrew has spent over twenty-two years working the oven and experimenting with pizza at every stage of the process and in a variety of environments, including as the former Executive Chef of Soho House Toronto.

 

Perhaps the one thing he may love more than eating it himself, is watching a person light up as they take their first bite of a delicious and well balanced pie.

MIKE TRUDEAU

Born and raised in Sault Ste. Marie, Mike moved to Whistler at the age of eighteen.

 

When not shredding the slopes, he was cutting his teeth in the culinary world, starting as a dishwasher and moving up the ranks to line cook.

 

Those early years set the stage for what has become a very successful career in the industry. From Piano Piano to Executive Sous at Soho House to developing Victory Pizza in Toronto, he became a Chef/partner at Bello in late 2021 where he continues to fill hearts and bellies with his amazing food!

HENRIK TONNING

Henny joined the Bello family as a partner and front of house manager in the spring of 2024.

 

Originally from New Brunswick, Henny has over a decade of restaurant experience and is well regarded for his originality in mixology and bartending.

 

Prior to moving up to Collingwood with his fiancé Jess, he owned his own bespoke mobile bar and cocktail company called Up Your Spirits, in high demand for upscale private and corporate events in Toronto and beyond.

 

Come and sit at his bar and enjoy one (or three!) of his many delightful and delicious cocktail creations!

LEAH LEBLANC

With over twenty years of restaurant experience predominantly in fine dining, Leah is known for her uplifting and anticipatory hospitality style.

 

In addition to her position as Operations manager, she excels in events planning and is spearheading Bello’s new catering division. She genuinely loves hosting guests and getting to know every person who walks through the door at Bello.

Bello Pizza began as a quiet pandemic project when the late and great Jim Bienenstock approached our founder and chef Andrew LeBlanc to operate a rogue pizza oven at the back of his newest Hot Black location at Bloor and Runnymede in Toronto’s Bloor West Village.

 

Many years prior, Jimson and Andrew were part of the opening team at Soho House Toronto where it became immediately apparent to both that they shared the same unwavering passion for food and hospitality. So, in the winter of 2021 amidst rolling lockdowns and pandemic mandates, Jimson and Andrew embarked on bringing to life a concession model coffee, pizza, bottleshop that would quickly become a beloved spot for locals and pizza aficionados alike. Shortly after opening, Andrew brought onboard his chef and now business partner Mike Trudeau, another Soho alum and creative force who shares his love of pizza.  

A move northward was always in the playbook for Andrew, his wife Leah and their family. With Mike on board the timing felt right, and the crew moved up to Simcoe/Grey County to start scouting locations for a new flagship bricks-and-mortar.

 

A little over a year later, Bello Pizza Collingwood opened its doors inside the space formerly occupied by San Diego Italian Restaurant at 72 First Street. “The Shop” as it is lovingly referred, an intimate 25 seats, was an immediate success bringing amazing pizza, Italian-comfort inspired dishes, cocktails, and Sommelier Lorie O’Sullivan’s thoughtful wine picks to the people of Collingwood and the surround. 

In the summer of 2024 Bello was overjoyed to welcome Henrik Tonning to round out the ownership and front of house team. His vision for everything bar and hospitality continue to earn Bello Pizza Collingwood accolades and adoration from locals and tourists alike.  

In January of 2025 Andrew made the tough but well-considered decision to close the Toronto Bello location so he and his team could focus all their attention on expanding the Bello brand in the North. The future of Bello is bright and there are lots of good things to come!
